With a glaze of caramel sauce, this banana dish is a sweet ending to any dinner. Rich-flavored walnut oil lends an exotic accent. Apple juice is a good substitute for the rum in a nonalcoholic version. (Serves 6)

Although these soufflés are made with unsweetened cocoa instead of the usual rich chocolate, their flavor is just as intense. If you can't find fresh raspberries, sliced fresh strawberries will do nicely.
